Our Philosophy

The Rovescio was born out of paradox which became our philosophy: we do not source our produce based on the menu, but instead we build the menu around what produce is available at each time of the year, based on the offerings of our small-scale, local producers.

We prepare our dishes every day using fresh, natural ingredients.
We opt for seasonal raw materials farmed using organic and biodynamic techniques by local producers.


Vegetarian and vegan dishes are not an alternative for us, they are satisfying and tasty options in their own right.
This approach may lead to changes in the menu but it may also reward you with some pleasant surprises.
